Game Day Taco Soup Made with Del Monte Southwestern-Style Petite Cut® Diced Tomatoes *CLOSED*
One of my favorite times of the year is game day! It’s not just all of the hype of the big game but also about the food for me. I love to make a big spread whether we are having family and friends over or are just spending it by ourselves and this year isn’t going to be any different. I am going to share our favorite game day taco soup made with Del Monte Southwestern-Style Petite Cut® Diced Tomatoes.
Now I know that there are a lot of recipes around the web for taco soup but they are nothing like mine! Why? Because I use Del Monte Southwestern-Style Petite Cut® Diced Tomatoes. What’s the difference? Quiet a few, for one I do NOT use a packet of seasoning because the Del Monte Southwestern-Style Petite Cut® Diced Tomatoes offer a variety of flavor already in them and it’s a lot more flavorful to add my own spices!
Recipe: Soup

Serves: 10-16
This taco soup is perfect for game day or for a chilly day that needs something to warm you up.
Ingredients:
1-2 Lbs. Ground Beef1 Medium Yellow Onion, chopped1 Clove Garlic, minced2 (15.5 oz.) Cans Pinto Beans1 (15.5 oz.) Can Kidney Beans, drained and rinsed1 (15 1/4 oz.) Can Whole Kernel Corn, drained1 (14.5 oz.) Can Can Del Monte® Mexican Recipe Stewed Tomatoes1 (14.5 oz.) Can Can Del Monte® Petite Cut® Diced Tomatoes with Green Chilies1 (14.5 oz.) Can Monte® Petite Cut® Diced Tomatoes
Dry Ingredients:
1 tsp. Cumin
1 tsp. Oregano
1 tsp. Chili Powder
1 tsp. Garlic Powder
1 tsp. Onion Poweder
Salt & Pepper to taste
Optional:
2 Limes, juiced
Corn chips, for serving
Sour Cream, for garnish
Grated Cheese, for garnish
Chopped Green Onion, for garnishOlives, for garnish
Avocado, for garnish
Jalapenos, for garnish
Instructions:
- Brown the ground beef, add dry ingredients and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles and minced garlic; cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove.
- To serve, place a few corn chips in each bowl and ladle soup over them. Top with lime juice, sour cream, cheese, green onions and jalapenos.
